This Dill Pasta Summer Salad recipe is perfect to share at pool parties or use as a meal prep item for the week.

 

The fresh dill & the cool coconut yogurt dressing give this dish lots of flavor!

 

Dill Pasta Summer Salad Recipe

 

Ingredients:

  • 1 lb of Fusilli pasta or other short pasta, cooked & cooled

  • 1 Orange Bell Pepper, chopped

  • ½ Red Onion, chopped

  • 1 cup of Broccoli, chopped

  • 1-2 cups of grape tomatoes, halved

  • 1 cup Spinach, chopped

  • Fresh dill, chopped

Optional:

  • Cheese, feta or parmesan

  • salami, chopped

  • Tofu

Dressing:

  • Coconut Yogurt (or any plain yogurt)

  • Pickle Juice

  • Dijon Mustard

  • Fresh dill

  • Dried parsley

  • Red chili flakes

  • Salt & pepper

 

DIRECTIONS:

Chop ingredients.

Make dressing.

Mix everything together.
